Our Preserves, Pickles & Marmalades
I’ve always tried to avoid food waste, which is where my interest and expertise in preserving began.
While growing up we had a small family garden – 50% of it laid to veggies and fruit which would sustain the family throughout the year. As children we had fresh veg, frozen veg, bottled veg, jams, marmalades and the dreaded ‘grey runner beans’ brought out each February (beans laid down in salt since September) they made me gag! We never bought fruit and veg thanks to my mum’s good housekeeping and preserving skills and dad’s growing expertise.
I have come a long way since then, but my roots lay in that upbringing. I like to call my range ‘the modern way’ – I have experimented over the years with time honoured recipes and tweaked them to have a contemporary twist. Friends and family have always enjoyed my jars, even the experimental ones. They have encouraged me to design a brand and sell my products.
All the ingredients I use are fresh and natural. I buy from a local greengrocer, or private growers who have a glut of fruit or vegies. There are very few food miles involved. I take pride in using recipes of old and putting a new twist on them, with the addition of interesting and sometimes exotic flavours.
By using seasonal fruits and vegetables, I try to make them last longer with the humble approach of ‘waste not, want not’. All of my preserves are handmade with spices that are freshly ground at the time of making to ensure the precious flavours are at their peak when added to my recipes.
My range will change depending on the with season and availability of good produce. If I can’t get the raw products I need locally, I try my best to source from ethical importers and growers.
